Right now, I’m attempting a gluten version of my “gluten free bread tasting bread!” bread, but its turning out a little more difficult to make than I had imagined…

I’m only doing this because its much cheaper to buy non-gf baking ingredients and my family are non-coeliacs so I’m just trying to reproduce the same bread with slightly different ingredients! Fingers crossed it’ll work!




Spelt bread is NOT gluten free!!!

So I was told by my boyfriends friend that when he thought he was coeliac, people said spelt bread is a good substition for mnormal bread because it tasted JUSt like bread! Well… So i did a bit of research and it turns out that it only tastes like real bread because it has gluten in it and is from the same family as wheat! (it is wheat free though!)

Therefore I decided to make a new bread… using GF self raising flour instead of the normal plain flour and all.

And I think I have come up with a perfect substitute for bread!!! I call it.. the GF bread tasting bread! 😛 Original huh?! 

So I gave a bit to my sister to try before telling her what bread it was and she said it tasted amazing!!  Super with soup! and when I told her I made it with GF flour she was so surprised because she said it tasted JUSt like bread!! I was super thrilled! So i went to my boyfriend’s place and surprised him with .. mORE bread! He was super pleased and said he can’t believe how good it tasted because he was pretty certain that it wasn’t going to ever be as good as normal bread, but he’s surprised and is delighted!! Said he’d eat it again!! Wooooooo!! so this is definately a successful recipe!! He told me that he actually didn’t REALLY like the previous experimental GF breads but didn’t want to hurt my feelings! haha.. well.. at least I made something he actually likes, so i’m proud!! 😀 woot woot!! I’ll post the recipe tomorrow because i’m making another one tomorrow so I’ll take a picture of it with the recipe!




So after sending them 3 emails of complaints, I still have gotten NO reply. I have purchased a 10e groupon deal for a leather bound photo book for my sister as a graduation gift. So she spends forever making her album to find that there is NO check out button.. yes, we have searched EVERYWHERE on the site.. the help section doesn’t even help at all! You’d think they’d have it in the frequently asked questions if the check out otpion is so hard to find!!

I feel cheated from this poor servece of printerpix AND groupon (as I have cc’d on the email I sent to printerpix to them as well with no reply!) and I will not give in to it. I am going to stand my ground and keep hassling them until I get some response!! Not going to let printerpix and groupon away with taking my 10e without getting the service I paied for. Seriously unproffessional. And the fact that the deal i bought expired on the 22nd of november, I did email them straight away when I found out the item was not “check-out”-able and still no reply. I am not going to phone them on their customer service number as i have read previously that people, who this have also happened to, had called their number but ended up being on hold or unable to reach anyone and getting charged a fortune for the call. I feel that email should be just as good a media to complain. There is no reason to have a “contact us” section with an email address on it for us to contact with problems if they aren’t going to read them! For all I can see, its all for show.

AND the fact that printerpix is doing ANOTHER deal with groupon, despite all the complaints regarding the leather bound photobook, I really can’t say how the outcome will be. I just hope people won’t have the same experience as I did with them, so I would advice you to reconsider buying from printerpix. Especially if it is for an important gift as chances are it might never arrive or you might not be able to check out your project, like what happened in my case.

Adjusted recipe.. attempt number 2!

1 Tbsp. quick yeast
1 Tbsp. sugar
1 ½ cup water (warm, i boiled the water and let it cool to the point where it was warm when i put my finger in!)

3 cups of gluten and wheat free plain white flour blend
1 ½  tsp. xanthan gum
1tsp. salt

2 eggs
1 ½ Tbsp. oil
1 tsp. cider vinegar

Less moist!! But still! Next time might try add in one flat tsp of baking soda to help it rise a bit.

It’s a bit moist in the center, but looks and tastes awesome over all! Need a little adjustment!

I got the recipe from http://www.glutenfreecookingschool.com/archives/finally-really-good-sandwich-bread/ but adjusted it a little. 🙂

1 Tbsp. quick yeast
1 Tbsp. sugar
1 ½ cup water (warm, i boiled the water and let it cool to the point where it was warm when i put my finger in!)

2 ½ cups of gluten and wheat free plain white flour blend
2 tsp. xanthan gum
1tsp. salt

3 eggs (or 9 Tbsp. water and 3 Tbsp. ground flax seed)
1 ½ Tbsp. oil
1 tsp. cider vinegar

1. Start by combining the yeast and sugar in a small bowl (I use the smallest in my set of three nested mixing bowls). Add the water while gently stirring the yeast and sugar. Let this mixture sit while you mix the rest of the ingredients – bubbles and foam should form if the yeast is happy.

2. Combine the flour mix, xanthan gum and salt in the largest mixing bowl and stir well.

3. In a third bowl, whisk the eggs, oil and vinegar until the eggs are a bit frothy.

4. By this point the yeast mixture should be foamy, so you can pour the two liquid mixtures into the flour mixture. Blend the dough with a mixer for 4 minutes.

Next time I think i might cut down on the xanthan. Maybe use 1 tsp. instead of 2 tsp. 🙂

tastes great with butter and dipped in veggie soup! 😀 Though my boyfriend says it tastes better just by itself with butter. 😛

Gluten-free start!

So my boyfriend has been having really bad abdominal/stomach pains for 18months and tired all the time… doctors he’s seen have not been able to diagnose him and he was even told his results were negatvie for celiac. however I was talking to my mums friend the other night and 3 of her kids are celiacs however all were negative as well for the test!


I am making my boyfriend go on a gluten-free diet for at least 3 days to see if it helps!! He didn’t like the idea at start because he loves a LOT of stuff with gluten in them! It’s pretty much impossible to please him because things he like to eat he cant eat now and the gluten-free foods are so expensive and not so tasty at all. So he was reluctant until I said to him that I’d bake him fresh gluten free bread to start him off and also going to try some other stuff which i’ve found online!

He has to be VERY careful though because even the slightest contact with gluten in his stomach can ruin his gluten free day so i’m making him be SUPER careful when eating at his flat (because the other 2 flatmates and friends of his are extremely messy and use his things all the time so there’s a high possibility that his foods could get contaminated!)

So make sure ALL the cutlery and utensil he uses for cooking is clean and the area he’s eating in is clean!

Now we’re making gluten free sandwich bread!! hopefully it’ll taste super nice!! FINGERS CROSSED!!
